2012-08-31Kadaise esu valgiusi falafelių “Baltuose Dramliuose”. Ir žinote kÄ…? AbsoliuÄiai neprisimenu, koks skonis :) Bet kai vienai miÅ¡rainei nusipirkau avinžirnių ir supratau, kokie beprotiÅ¡kai skanÅ«s jie yra, sugalvojau iÅ¡sikepti falafelių pati. GalÄ—Äiau juos pavadinti savo Å¡ių metų atradimu. Valgom su daržovÄ—mis ir tzatziki padažu – mmmm! Receptų daug ir jie visi skirtingi. Pateiksiu savo:
ReikÄ—s:
300 gramų sausų avinžirnių
4 šaukštų miltų
poros iÅ¡spaustų Äesnako skiltelių (aÅ¡ naudoju savo iÅ¡ anksto pasiruoÅ¡tÄ… Äesnakų pastÄ…)
saujos smulkintų šviežių petražolių arba poros šaukštų džiovintų
1 šaukštas maltos kalendros
1 šaukštas maltų kuminų, galima ir daugiau
poros šaukštų alyvuogių aliejaus
1 nedidelio svogūno
druskos, pipirų
kam reikia aštrumo, siūlau įsiberti aitriosios paprikos miltelių, aš aštriai nedariau niekad
Falafelius ruoÅ¡ti pradekite iÅ¡ vakaro :) T.y., užmerkite avinžirnius dideliame kiekyje vandens, nes puÄiasi jie smarkiai. IÅ¡brinkusius avinžirnius gerai sumalkite. AÅ¡ trinu su blenderiu, bet jei blenderis nelabai kokybiÅ¡kas, siÅ«lyÄiau net nebandyti, nes gali perkaisti – avinžirniai yra kietas reikalas, net ir iÅ¡mirkÄ™. Tai lieka mÄ—smalÄ—, virtuvinis kombainas ar kokie nors kitokie bÅ«dai. Kiti trina avinžirnius jau iÅ¡virtus, bet aÅ¡ jų neverdu – vis tiek iÅ¡keps.
Ä® avinžirnių masÄ™ suberkite miltus ir visus prieskonius, įpilkite aliejaus, sudÄ—kite ÄesnakÄ…. ViskÄ… gerai sumaiÅ¡ykite. Man visada masÄ— gaunasi pati ta falafelių lipdymui, kitiems, sako, limpa prie rankų… Nežinau, man nelimpa. Jei limpa, sudrÄ—kinkite delnus. IÅ¡ masÄ—s formuokite rutuliukus, manieji bÅ«na nedideli, tokie, kad į delno įdubimÄ… telpa. Mažesni greiÄiau ir geriau iÅ¡kepa.
Į keptuvę pripilkite aliejaus ir gerai įkaitinkite. Dėkite falafelius ir apkepkite iš abiejų pusių, kol paruduos. Aišku, jei turite fritiūrinę, tai naudokite ją. Sveikuoliai kepa juos orkaitėje be aliejaus, bet aš nesu sveikuolė :) Bijau, kad orkaitėje iš jų išeis paskutinis garas ir bus labai sprangūs (ir taip jau sausoki gaunasi). Su padažu nesvietiškai skanūs tiek šilti, tiek šalti. Ir į darbą gerai neštis. Skanių vegetariškų kotletų!
